  • 2 cloves Garlic, minced Adjust according to preference.
  • 1 teaspoon Oregano Dried or fresh, to enhance flavor.
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper Freshly ground adds more flavor.
For serving
  • 2 cups Rice or mixed greens Use rice according to preference.
  • 1 cup Tzatziki sauce Consider using high-quality Greek yogurt.
  • 1/2 cup Kalamata olives Pitted and halved.
  • 1 medium Cucumber, diced Fresh and crunchy.
  • 1 cup Tomatoes, diced Use seasonal tomatoes for best flavor.
  • 1/2 medium Red onion, thinly sliced Adjust according to taste.
  • 1/2 cup Feta cheese, crumbled Optional: use vegan cheese for dairy-free version.

Method
 

Preparation
  1. In a bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create a marinade.
  2. Marinate the chicken in the mixture for at least 30 minutes.
Cooking
  1. Cook the marinated chicken on a grill or in a skillet until fully cooked and golden brown.
  2. Prepare rice according to package instructions or set aside mixed greens.
  3. Slice the cooked chicken and place it over rice or greens.
Assembly
  1. Top with tzatziki, Kalamata olives, cucumber, tomatoes, red onion, and crumbled feta cheese.
  2. Serve immediately and enjoy!

Notes

For optimal flavor, you can marinate the chicken overnight. Pair with warm pita bread or a Greek salad.
