Ingredients
  

For the Chicken
  • 6 pieces chicken pieces (drumsticks and thighs) Choose plump, fresh pieces for best results.
  • 1 cup buttermilk Can be substituted with almond milk mixed with vinegar for a dairy-free option.
  • 2 cups all-purpose flour Can use gluten-free flour if necessary.
  • 2 eggs eggs Beaten for coating.
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • to taste vegetable oil (for frying) Ensure oil is hot enough before frying.
For the Salad
  • 2 cups lettuce, shredded
  • 1 cucumber cucumber, sliced
  • 2 tomatoes tomatoes, sliced

Method
 

Marinate the Chicken
  1. Soak the chicken in buttermilk combined with paprika, garlic powder, onion powder, salt, and pepper. Ensure the chicken is well-coated for better flavor absorption.
Coat the Chicken
  1. Dip each marinated chicken piece in beaten eggs, letting the excess drip off, followed by dredging them in seasoned flour until fully coated.
Fry Until Golden
  1. Heat vegetable oil over medium-high heat. Fry the chicken for 12-15 minutes or until a deep golden brown and cooked through.
Prep the Salad
  1. While the chicken is frying, slice the cucumbers and tomatoes, and prepare a bed of shredded lettuce.
Plate & Serve
  1. Arrange the crispy fried chicken alongside the fresh salad and serve, optionally drizzling olive oil over the salad.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, place chicken in a freezer-safe bag and use within 1 month. To reheat, use an oven preheated to 375°F for about 10-15 minutes.
