  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons sweet paprika Use good quality for best flavor

  • 1 cup red wine (optional) Adds depth to the flavor
  • 1 teaspoon vinegar (optional) Adds a gentle tang
  • 2 tablespoons oil or butter For browning the beef
  • to taste salt and pepper

Method

Preparation
  1. Pat the beef dry with paper towels to ensure it browns better.
  2. Brown the beef in batches in a large pot, ensuring not to crowd the pot.
  3. Cook the sliced onions in the same pot until they soften and become glossy.
  4. Stir in the minced garlic and tomato paste and cook for an additional minute.
  5. Lower the heat, then add the paprika to avoid burning it.
  6. Pour in the beef broth and any red wine you're using, scraping the bottom of the pot.
  7. Return the browned beef to the pot and bring to a gentle simmer.
Cooking
  1. Simmer the mixture gently for about 90 minutes or until the beef is fork-tender.
  2. Taste and adjust seasoning, adding a splash of vinegar to enhance the flavors.

Notes

Make it a day ahead for even better flavor. Serve with egg noodles, spaetzle, or crusty bread for a complete meal.
