German Fruit Flan

Ingredients
  

For the Sponge
  • 3 pieces eggs
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp baking powder
For the Vanilla Cream
  • 2 cups milk Heated
  • 3 pieces egg yolks
  • 1/3 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
For the Fruit Topping
  • 1 cup strawberries, sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 tbsp sugar For glaze
  • 1 tsp cornstarch For glaze
  • 1/2 cup water For glaze

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9-inch flan pan with butter or spray, then dust with flour.
  2. In a bowl, lightly beat the eggs with 1/2 cup sugar until frothy (about 2 minutes). Be careful not to overbeat.
  3. Gently fold in the all-purpose flour, cornstarch, and baking powder until just blended. Pour the batter into the prepared pan.
Baking the Sponge
  1. Bake for 12-15 minutes or until the top is golden brown and a toothpick comes out clean. Let it cool.
Making the Vanilla Cream
  1. Heat 2 cups of milk in a saucepan over medium heat until warm, but do not boil.
  2. In another bowl, whisk together the egg yolks, 1/3 cup sugar, and cornstarch until smooth.
  3. Gradually stir in the warm milk. Return this mixture to the saucepan and cook over low heat until thick, stirring constantly, about 5 minutes.
  4. Remove from heat and stir in the vanilla extract.
Assembling the Flan
  1. Pour the cream evenly over the cooled sponge. Arrange sliced strawberries, blueberries, and raspberries on top.
  2. In a small saucepan, dissolve the sugar and cornstarch in 1/2 cup water. Simmer until thickened, about 3-5 minutes.
  3. Brush the glaze over the fruit to add shine. Chill for 1 hour before serving.

Notes

Store leftovers in the refrigerator for up to 3 days. Freezing is not recommended with cream and fruit, but the sponge can be frozen for a month without toppings.
