Ingredients
  

For the Lamb
  • 8 pieces lamb rib chops Look for bright red meat with a good layer of fat.
  • 2 tbsp olive oil For rubbing lamb chops.
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Mashed Potatoes
  • 2 lbs Yukon Gold potatoes, peeled and cubed Chosen for their rich, creamy texture.
  • 4 tbsp butter
  • 1/2 cup warm heavy cream Can substitute with almond milk for a dairy-free version.
  • 1 tbsp roasted garlic (optional)
For the Honey Roasted Carrots
  • 1 lb whole baby carrots Can use pre-cut to save time.
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp thyme

Method
 

Preparation of Mashed Potatoes
  1. Boil the cubed Yukon Gold potatoes in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.
  2. Mash with butter, warm cream, optional roasted garlic, salt, and pepper until silky smooth. Avoid over-mashing.
Roasting Carrots
  1. Preheat the oven to 425°F (220°C).
  2. Toss the baby carrots with olive oil, honey, thyme, salt, and black pepper. Spread on a baking sheet and roast for 25-30 minutes.
Searing the Lamb Chops
  1. Rub the lamb chops with olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Let rest for 15 minutes.
  2. Heat a skillet over medium-high heat. Sear the lamb chops for 3-4 minutes on each side until browned.
Assembling the Dish
  1. Serve the lamb chops beside the creamy mashed potatoes and honey-roasted carrots. Spoon pan juices over the lamb and garnish with fresh parsley and rosemary.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in the oven. Consider meal prepping by saving a portion of seared lamb for sandwiches or salads.
