Ingredients
  

Chicken and Seasoning
  • 4 pieces chicken breasts Opt for fresh, organic chicken breasts for better flavor.
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil More may be needed for the potatoes.
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
Vegetables
  • 4 medium potatoes, diced
  • 2 tablespoons butter Can be replaced with olive oil for a healthier version.
  • 2 tablespoons honey Can be substituted with maple syrup.
  • 2 cups carrots, sliced
  • 2 cups broccoli florets

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, blend the olive oil, minced garlic, thyme, rosemary, salt, and pepper.
  3. Coat each chicken breast with the mixture and arrange them in a baking dish.
  4. In another bowl, toss the diced potatoes with more olive oil, salt, and pepper.
Cooking
  1. Spread the potatoes around the chicken in the baking dish.
  2. Bake the chicken and potatoes in the preheated oven for 25-30 minutes.
  3. Melt butter in a skillet over medium heat, add the sliced carrots, and sauté until tender.
  4. Stir in the honey until the carrots are well coated.
  5. Steam the broccoli until vibrant green and tender, about 4-5 minutes.
Serving
  1. Serve the garlic herb chicken alongside the roasted potatoes, honey-glazed carrots, and broccoli.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze in freezer-safe bags for up to 2 months. Reheat in the oven at 350°F (175°C).
