  • 1 cup freshly grated parmesan cheese Grate yourself for smoother melting.
Optional Garnish
  • 1 tablespoon chopped parsley Adds color and freshness.
  • 1 squeeze lemon juice Brightens flavor.

Method

Preparation
  1. Cut the sirloin steak into bite-size cubes, approximately 1 inch.
  2. Pat the steak cubes dry with paper towels to help them brown.
  3. Season the cubes with salt, pepper, and paprika (if using).
Cooking the Steak Bites
  1. Heat a large skillet over medium-high heat and add oil.
  2. Add the steak in a single layer, avoiding crowding. Sear for about 1 to 2 minutes without stirring, then flip and sear for another minute or two until browned.
  3. Remove the steak bites from the skillet and set aside.
Making the Sauce
  1. Lower the heat to medium and add the butter to the skillet. Once melted, add the minced garlic and stir for about 20 to 30 seconds until fragrant.
  2. Pour in the heavy cream and allow it to bubble gently for a minute or two.
  3. Gradually add the grated parmesan cheese, stirring until the sauce is smooth.
Finishing Up
  1. Return the cooked steak bites and any accumulated juices back to the skillet, tossing them in the sauce for about 1 minute until warm.
  2. Taste and adjust seasoning with more salt and pepper, if needed. Add lemon juice if using, and garnish with chopped parsley.

Notes

Do not overcrowd the pan and pat the steak dry to ensure a good sear. Use gentle heat for the sauce to keep it smooth.
