Preparation
- Begin by preheating your oven to 350°F (175°C). A hot oven ensures the casserole cooks evenly.
- In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté until they are golden brown and caramelized, stirring occasionally, about 15-20 minutes.
- Season the chicken breasts with salt and pepper, and add them to the skillet with the onions. Cook until they are no longer pink in the center, about 5-7 minutes.
- Stir in the orzo, chicken broth, heavy cream, and thyme, mixing everything together. The orzo will absorb much of the broth as it cooks, creating a flavorful base.
- Pour the mixture into a greased casserole dish, spreading it evenly. Top with shredded cheese, which will melt and create a delicious crust.
Baking
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbling.
- Let the casserole sit for a few minutes before serving. Garnish with fresh thyme for an aromatic touch.
Notes
Caramelization is key: Don’t rush the onion caramelization process; this is where the dish develops its rich flavor. Use fresh thyme: Fresh herbs elevate the dish. If using dried thyme, reduce the amount since it’s more potent. Adjust creaminess: For a lighter version, swap part of the heavy cream with more chicken broth.
