Ingredients

Main Ingredients
  • 1 piece Beef roast (chuck, bottom round, or top round) Chuck roast is recommended for tenderness.
  • 2 cups Beef broth or stock
  • 1 medium Onion (sliced) or onion powder Sliced onion recommended for flavor.
  • 2 cloves Garlic (minced) or garlic powder
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Soy sauce For added depth.
  • 1 teaspoon Italian seasoning or thyme
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Black pepper To taste.
  • 6 pieces Hoagie rolls or French rolls
  • optional Provolone or Swiss cheese For topping.

Method

Preparation
  1. Add sliced onion to the slow cooker. Place the roast on top. Sprinkle with salt, pepper, garlic, and seasoning.
  2. Pour in beef broth, Worcestershire, and a small splash of soy sauce. Make sure there is enough liquid to come halfway up the roast.
  3. Cook on low for 8 to 9 hours or high for 4 to 6 hours, until easy to pull apart.
  4. Remove the beef, then shred or slice it as desired.
  5. Strain the cooking liquid for a smoother au jus, then taste and adjust seasoning if necessary.
  6. Toast the rolls briefly to prevent sogginess.
  7. Serve the beef piled in the rolls with optional cheese and provide au jus for dipping.
Instant Pot Option
  1. Sear the roast using the sauté setting for a few minutes on each side.
  2. Add onions, broth, Worcestershire, soy sauce, garlic, and seasoning, ensuring nothing is stuck to the bottom.
  3. Pressure cook for 55 to 65 minutes for a 3 to 4 pound roast, letting it naturally release for 15 minutes.
  4. Shred or slice the beef, then taste and adjust the au jus seasoning.
  5. Simmer the au jus briefly if it needs to be concentrated.

Notes

For best results, toast the bread and taste the au jus before serving. Prepare the beef ahead of time and chill in broth for enhanced flavor the next day.
