  1. In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine the wet ingredients: milk, egg, melted butter, and vanilla. Whisk until smooth and slightly frothy.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until small lumps remain—do not overmix.
  4. Let the batter rest for 5 to 10 minutes while preheating the pan.
  5. Preheat a lightly buttered pan over medium heat. Pour in the batter, using about ¼ cup for each pancake.
  6. Cook until bubbles form on the surface and edges look set, then flip and cook until the second side is browned.

Notes

Avoid overmixing to keep pancakes fluffy. Let your pan preheat properly for best results. You can add blueberries or chocolate chips after pouring the batter to avoid them sinking.
