Preparation
- In a bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
- In another bowl, mix the wet ingredients: milk, eggs, melted butter, and vanilla extract.
- Combine the wet and dry ingredients gently, leaving some small lumps in the batter. Let it rest for 5-10 minutes.
Cooking
- Heat a nonstick pan or skillet over medium heat and add butter and a touch of oil.
- Pour 1/4 cup of batter into the pan and do not touch it. Wait for bubbles to form on the surface and the edges to set.
- Once ready, flip the pancake and cook for another 45-75 seconds until lightly golden.
- Repeat with remaining batter, wiping the pan with a paper towel as needed.
Notes
Serve pancakes warm with your choice of toppings such as maple syrup, fresh fruits, or chocolate chips. Keep finished pancakes warm in a 200°F oven until serving.
