Ingredients

Main Ingredients
  • 1.5 to 2 pounds boneless skinless chicken breasts or thighs Thighs give richer flavor and stay tender.
  • 4 cups chicken broth
  • 1 can cream of chicken soup Can be substituted with homemade option.
  • 1 small onion, diced
  • 2 carrots peeled and sliced
  • 2 stalks celery, sliced
  • 2 to 3 cloves garlic, minced
  • 1 teaspoon poultry seasoning Plus black pepper to taste.
Dumpling Ingredients
  • 1/2 cup milk or splash of heavy cream Use for creaminess.
  • 1 can refrigerated biscuit dough For quick and easy dumplings.
Optional Additions
  • frozen peas Add in the last 20 minutes.
  • fresh parsley

Method

Preparation
  1. Layer the base: Add the chicken, chopped onion, carrots, celery, garlic, and seasoning to the crockpot.
  2. Add the liquid: Pour in chicken broth and a can of cream of chicken soup, then stir lightly.
  3. Cook: Set on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is very tender.
  4. Shred the chicken: Pull it out, shred with two forks, then put it back in.
  5. Thicken and creamy it up: Stir in a splash of milk or a little heavy cream.
  6. Add dumplings: Drop biscuit dough pieces on top, cover, and cook for 45 to 60 minutes until fluffy and cooked through.
  7. Let it sit: After the dumplings are done, let everything sit for about 5 minutes with the lid off for the sauce to settle.

Notes

Do not over stir after adding dumplings. Season at the end, and taste before adding extra salt. The recipe is forgiving, but keeping the lid closed helps the dumplings puff up.
