  • 1 tablespoon Aluminum-free baking powder For crispiness.
  • 1 teaspoon Salt Adjust to taste.
  • 1 teaspoon Pepper Adjust to taste.
  • 1 teaspoon Garlic powder For flavor.
  • 1 teaspoon Onion powder For flavor.
  • 1 teaspoon Paprika or smoked paprika Adds color and flavor.
  • 1 teaspoon Neutral oil (e.g., avocado or canola) To help the spices stick.

  • 1 teaspoon Cayenne or chili powder For heat.

Method
 

Preparation
  1. Line a rimmed baking sheet with foil and set a wire rack on top, lightly greased.
  2. Pat the wings dry with paper towels until no moisture remains.
  3. In a bowl, toss wings with salt, pepper, garlic powder, onion powder, paprika, and baking powder.
  4. Add a teaspoon of oil and toss again to evenly coat.
Cooking
  1. Arrange wings on the rack with space between each.
  2. Bake at 450°F for 40 to 50 minutes, until golden and crackly.
  3. For extra crisp, broil for 2-3 minutes at the end, keeping a close watch.
  4. Let the wings rest for 5 minutes before tossing them with your sauce.

Notes

For best results, use a wire rack. Let wings dry completely for optimum crispiness. If making a large batch, bake two trays and rotate halfway through.
