Preparation
- Line a rimmed baking sheet with foil and set a wire rack on top, lightly greased.
- Pat the wings dry with paper towels until no moisture remains.
- In a bowl, toss wings with salt, pepper, garlic powder, onion powder, paprika, and baking powder.
- Add a teaspoon of oil and toss again to evenly coat.
Cooking
- Arrange wings on the rack with space between each.
- Bake at 450°F for 40 to 50 minutes, until golden and crackly.
- For extra crisp, broil for 2-3 minutes at the end, keeping a close watch.
- Let the wings rest for 5 minutes before tossing them with your sauce.
Notes
For best results, use a wire rack. Let wings dry completely for optimum crispiness. If making a large batch, bake two trays and rotate halfway through.
