Ingredients
  

For the Chicken
  • 6 pieces chicken drumsticks Look for firm, plump meat with no discoloration.
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tbsp lemon juice
For the Fries
  • 4 large potatoes, cut into thick fries Choosing fresh potatoes helps achieve the perfect fry texture.
  • 2 tbsp vegetable oil
For the Vegetables
  • 1/2 cup tomato sauce
  • 1 clove garlic, minced
  • 1/2 tsp paprika
  • Pinch chili flakes

Method
 

Preparation
  1. In a large bowl, mix 2 tbsp olive oil, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp turmeric, 1 tsp black pepper, 1 tsp salt, and 1 tbsp lemon juice. Coat the chicken drumsticks well.
Cooking the Chicken
  1. Preheat your grill or oven to 400°F (200°C). Grill or bake the chicken for 35-40 minutes until crispy and the juices run clear.
Preparing the Fries
  1. While the chicken cooks, heat 2 tbsp vegetable oil in a frying pan. Add the cut potatoes, frying until golden brown and crispy, about 10-15 minutes.
Sautéing the Vegetables
  1. In another pan, heat a bit of olive oil and add sliced bell peppers and onion. Sauté until soft and caramelized, about 8-10 minutes.
Making the Spicy Tomato Sauce
  1. In a small bowl, combine 1/2 cup tomato sauce, 1 minced garlic clove, 1/2 tsp paprika, and a pinch of chili flakes.
Serving
  1. Plate the grilled chicken alongside the crispy fries and sautéed vegetables. Drizzle the spicy tomato sauce over the chicken.

Notes

For best flavor, marinate chicken overnight. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months. Reheat in the oven for the best texture.
