Preparation
- In a bowl, combine olive oil, paprika, garlic powder, onion powder, salt, black pepper, cayenne, and lemon juice. Coat the chicken leg quarters thoroughly. Marinate for at least one hour.
- While the chicken marinates, cut potatoes into fry shapes.
Grilling
- Preheat the grill to medium-high. Place marinated chicken skin-side down and cook for 35–45 minutes, turning occasionally until fully cooked and charred.
Frying the Fries
- Fry or bake fries until golden brown and crispy. If baking, toss potatoes with vegetable oil and salt beforehand.
Making the Salad
- In a large bowl, combine shredded lettuce, sliced cucumber, shredded cabbage, and grated carrot. Drizzle with sweet chili sauce or hot sauce.
Serving
- On a plate, place a serving of grilled chicken alongside a portion of crispy fries and a vibrant salad. Garnish with additional sauce if desired.
Notes
Crispy fries can be stored in the fridge for up to 3 days. For freezing, place the chicken and fries in a freezer-safe container for up to 3 months.
