Ingredients

For the chips
  • 2 cups Cottage cheese Use small curd if possible; full-fat gives the best flavor and crispness.
  • 1 tsp Salt To taste; adjust based on cottage cheese saltiness.
  • 1/2 tsp Black pepper Simple seasoning.
  • 1/2 tsp Garlic powder Adds savory depth.
  • 1/2 tsp Paprika Optional for warmth and color.
  • 1/4 cup Grated Parmesan A pinch on top helps set the chips and adds crunch.
  • 1 sheet Parchment paper For nonstick baking surface.

Method

Preparation
  1. Preheat the oven to 375°F (190°C) or use an air fryer at 325°F (163°C).
  2. Line a large baking sheet with parchment paper.
  3. Scoop the cottage cheese into a fine mesh strainer or a paper towel lined bowl and press gently to release some of the extra liquid.
  4. In a small bowl, season the cottage cheese with salt, pepper, garlic powder, and other spices as desired. Stir until evenly coated.
  5. Drop small mounds (about one tablespoon each) onto the lined baking sheet and spread them into thin circles about 2 inches across.
Baking
  1. Bake for 18 to 25 minutes, rotating the pan halfway through, until chips are deep golden and dry on top.
  2. For air fryer, check at 10 minutes and adjust time as needed.
  3. Let them cool on the sheet for 2 minutes, then transfer to a rack to cool completely and crisp up further.
  4. Re-crisp in a 300°F (149°C) oven for 3 to 4 minutes before serving, if desired.

Notes
