Method
Cook the Rice
- In a medium saucepan, combine 1 cup of rice, 2 cups of water, and 1/2 tsp salt. Bring to a boil, then cover and reduce to a simmer. Cook for 15–18 minutes until fluffy.
- Avoid lifting the lid too often to keep the steam inside.
- Garnish the rice with fresh parsley before serving.
Prepare the Fries
- Preheat the oven to 425°F (220°C).
- Toss the cut potatoes with 2 tbsp vegetable oil and 1 tsp salt.
- Spread the fries evenly on a baking tray and bake for about 30–35 minutes, turning halfway.
- Look for golden brown color in the fries to ensure they are perfectly crisp.
Cook the Beef Stir-Fry
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Sauté 1 tsp minced garlic until aromatic, then add the thin beef strips in a single layer.
- Cook the beef until browned on all sides, about 4-5 minutes.
- Stir in onions and bell peppers, then add 2 tbsp soy sauce, 1 tbsp oyster sauce, 1/2 tsp salt, and 1/2 tsp pepper.
- Cook until the veggies are tender yet crisp, about 3-4 minutes.
Prepare the Salad
- In a large bowl, combine 2 cups curly lettuce, 2 diced tomatoes, and 1 tbsp chopped parsley.
- Add 1 tbsp olive oil and 1 tsp lemon juice. Season with salt and pepper to taste.
- Toss the salad well to combine.
Assemble & Serve
- On a large plate, scoop the fluffy rice into the center.
- Arrange the beef stir-fry around the rice, placing crispy fries on one side and the fresh salad on the other.
- Garnish with additional parsley for a delightful presentation.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. For freezing, use a freezer-safe container, where it will last for up to three months. Reheat in a skillet or microwave before serving.
