Ingredients

Main Ingredients
  • 4 pieces Chicken breasts (or thighs) Thighs provide juicier meat.
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Italian seasoning
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter A small knob.
  • 4 cloves Garlic, minced Fresh garlic makes a difference.
  • 1/2 cup Sun-dried tomatoes in oil, sliced Save a little oil for extra flavor.
  • 1/2 cup Chicken broth A splash to loosen the sauce.
  • 1 cup Heavy cream
  • 1/2 cup Grated parmesan cheese Freshly grated preferred.
  • 2 cups Fresh baby spinach
  • 1/4 teaspoon Red pepper flakes Optional for a tiny kick.

Method

Preparation
  1. Start by patting your chicken dry and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in a large skillet over medium high heat. Sear the chicken until golden on both sides, then transfer it to a plate.
  3. Lower the heat, add garlic to the pan, and stir for 20 to 30 seconds until fragrant.
  4. Add sun-dried tomatoes and stir them to pick up browned bits from the pan.
  5. Pour in a splash of chicken broth, scraping the skillet to incorporate all flavors, then add heavy cream and let it gently simmer.
  6. Stir in parmesan until the sauce is smooth, then add spinach and let it wilt into the sauce.
  7. Return the chicken to the skillet and simmer until cooked through. Adjust sauce consistency with broth if needed.

Notes

If your chicken breasts are thick, slice them in half lengthwise for even cooking. Use freshly grated parmesan for a smoother sauce. Avoid boiling the sauce hard; a gentle simmer keeps it creamy.
