For the Chicken
  • 6 pieces chicken drumsticks Choose high-quality drumsticks for juiciness and flavor.
  • 2 tbsp olive oil
  • 1 tbsp honey Maple syrup can be used as a substitute.
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
For the Creamy Herb Rice
  • 2 cups cooked long-grain rice Use gluten-free rice for dietary restrictions.
  • 1 cup broccoli florets, chopped Fresh vegetables should be bright and firm.
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese For a sharper flavor, use aged cheddar.
  • 1/2 cup heavy cream Substitute coconut cream for dairy-free option.
  • 1 tbsp butter
  • 1 cup sweet corn kernels Can be substituted with frozen corn.
For the Slaw
  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice

Method
 

Preparation
  1. Mix olive oil, honey, paprika, garlic powder, onion powder, salt, and pepper in a bowl, and coat the chicken drumsticks evenly. Let it sit for 30 minutes.
Roasting Chicken
  1. Preheat your oven to 400°F (200°C). Bake the chicken for 40–45 minutes, turning it once halfway through until golden and crispy. Ensure the internal temperature reaches 165°F.
Creamy Rice Preparation
  1. In a skillet, melt the butter and sauté the broccoli, spinach, and corn until tender. Stir in the cream and cheese with the cooked rice.
Slaw Preparation
  1. Toss shredded cabbage and carrots with mayonnaise, lemon juice, salt and pepper until combined.
Assembly
  1. Serve the creamy herb rice topped with glazed chicken drumsticks, alongside buttered corn and coleslaw.

Notes

For best results, serve with a light salad or roasted vegetables. Store in the fridge for up to 3 days or freeze for about 3 months. Reheat in the oven covered with foil at 350°F for about 20 minutes.
