Chicken and Seasoning
  • 2 large chicken breasts Fresh and local if possible
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt Additional for fries
  • 1/2 tsp black pepper
Creamy Sauce
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream High-fat for rich texture
  • 1/2 cup chicken broth
  • 1/2 cup Parmesan cheese, grated Freshly grated for best flavor
  • 1 tsp Cajun seasoning
  • 1/2 tsp chili flakes
  • 1 tbsp chopped parsley For garnish
Fries
  • 4 large potatoes, cut into thin fries Russet potatoes work best
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • Chopped parsley for garnish
  • Chili flakes for garnish

Method
 

Preparation
  1. Season the chicken: Coat the chicken breasts with Cajun seasoning, paprika, garlic powder, salt, and pepper.
  2. Cook the fries: Toss the potatoes in vegetable oil and salt, spread on a baking sheet, and bake at 425°F (220°C) for 30–35 minutes until golden and crispy.
Cooking
  1. Sear the chicken: In a hot skillet, heat olive oil and add the seasoned chicken breasts. Cook for 5–6 minutes per side until golden brown and cooked through.
  2. Make the creamy Cajun sauce: In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth, heavy cream, Parmesan, Cajun seasoning, and chili flakes. Simmer until sauce thickens.
Serving
  1. Plate a chicken breast and spoon the creamy Cajun sauce over the top. Add crispy fries on the side and garnish with parsley and chili flakes.

Notes

For a dairy-free option, substitute cream with coconut milk and use nutritional yeast instead of Parmesan. Store leftovers in an airtight container in the fridge for up to 3 days.
