Creamy Cajun Chicken Bites & Fries

Ingredients
  

Chicken and seasoning
  • 2 lbs chicken breast, cut into bite-sized pieces Opt for organic or free-range for more flavor.
  • 2 tbsp olive oil For tossing the chicken.
  • 1 tsp paprika
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt To taste.
  • 1/2 tsp black pepper
Sauce ingredients
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese Freshly grated is preferred.
  • 1 tsp Cajun seasoning
  • 1/2 tsp red pepper flakes
  • 2 tbsp chopped parsley For garnish.
Fries
  • 1 1/2 lbs frozen or homemade French fries Cook according to package directions.
  • Salt to taste
  • Fresh parsley for garnish
  • Red pepper flakes for garnish

Method
 

Preparation
  1. In a large bowl, toss the chicken pieces with olive oil, paprika, Cajun seasoning, garlic powder, onion powder, salt, and black pepper until evenly coated.
  2. Preheat your oven or air fryer for the French fries and cook according to package directions until golden and crispy.
Cooking
  1. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-8 minutes until golden brown and cooked through.
  2. Once cooked, melt the butter in the skillet and sauté the minced garlic until fragrant, about 1 minute.
  3. Stir in the heavy cream and grated Parmesan cheese along with Cajun seasoning and red pepper flakes. Let the mixture simmer until thick and creamy.
  4. Toss the cooked chicken bites in the creamy sauce until thoroughly coated, then transfer them to a serving plate alongside the crispy fries.
  5. Garnish with additional parsley and red pepper flakes, and serve with extra sauce on the side.

Notes

For added flavor, marinate the chicken in the seasoning mixture for at least 30 minutes beforehand. Consider substitutions for dietary needs as needed.
