Ingredients
  

Dry Ingredients
  • 2 1/4 cups All purpose flour Spoon into the cup and level it off.
  • 1/2 tsp Baking soda
  • 1 tsp Cream of tartar
  • 1 tbsp Ground cinnamon Add more for a stronger flavor.
  • 2 tbsp Granulated sugar mixed with 1/2 tsp salt Use less salt if using salted butter.
Wet Ingredients
  • 1 1/8 cup Unsalted butter Use room temperature for easier mixing.
  • 1 1/4 cups Light packed brown sugar Can swap half for dark brown sugar.
  • 3/4 cup Granulated sugar
  • 2 large Eggs Use room temperature for better mixing.
  • 2 tsp Vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
Assembly
  1. Pour half of the batter into the baking dish and spread it evenly.
  2. Sprinkle the cinnamon sugar mixture over the first layer of batter.
  3. Pour the remaining batter on top and spread it evenly.
  4. Use a knife to swirl the cinnamon sugar into the batter.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing into bars.

Notes

For best texture, do not overmix after adding flour. Measure flour properly and press batter evenly into the pan for neat swirls.
