Method
Preparation
- Preheat the oven to 350°F (175°C) and line a 9x9-inch pan with parchment paper, leaving overhang for easy lifting. Lightly grease the sides.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 2 minutes. Add eggs one at a time, mixing until smooth. Blend in vanilla.
- Mix in the yogurt until just combined; the batter may look slightly curdled.
- Add dry ingredients to the wet ingredients, stirring gently until no flour streaks remain. Do not overmix.
Making the Swirl and Assembly
- In a small bowl, stir together brown sugar, cinnamon, melted butter, vanilla, and a pinch of salt until the mixture is thick and sandy.
- Spread half the batter into the pan and dollop half the cinnamon swirl over it. Swirl lightly with a butter knife. Spoon remaining batter on top, then repeat with the rest of the swirl. Give it one more soft swirl.
Baking
- Bake for 27 to 33 minutes, until the top is set and a toothpick comes out with a few moist crumbs. Do not overbake.
- Cool the pan for 20 to 30 minutes.
- While cooling, make the drizzle by beating cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt, thinning with milk to achieve a pourable consistency.
Serving
- Drizzle the cream cheese mixture generously over the cooled bars, then slice into 12 to 16 squares.
- Enjoy warm or at room temperature.
Notes
These bars can be stored at room temperature for 1 to 2 days, or in the fridge for up to 5 days. They can also be frozen for longer storage. Rewarm in the oven or microwave for best results.
