Method

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream softened butter, brown sugar, and white sugar until fluffy and light.
  3. Add egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cornstarch.
  5. Gently combine the dry ingredients with the wet mix until no streaks of flour remain.
  6. Fold in chocolate chips using a gentle hand.
  7. For thicker cookies, chill the dough for 20 to 60 minutes.
Baking
  1. Scoop dough into balls slightly smaller than golf balls and place on a baking sheet.
  2. Bake for 9 to 11 minutes, until edges are set and the centers look slightly underdone.
  3. Let cool on sheet for 5 minutes before transferring to a wire rack.
  4. Optionally sprinkle with flaky salt before serving.

Notes

Cookies are best eaten warm but can be stored in an airtight container for 3 to 4 days. Freezing cookie dough is an excellent option; scoop, freeze until firm, then store in a freezer bag for up to 3 months. Bake directly from frozen, adding 1-2 minutes to the baking time.
