Preparation
- Preheat your oven to 350°F (175°C). Grease two 8-inch cake pans or one 9x13 pan.
- In a large bowl, whisk together the dry ingredients: flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Add in the eggs, milk (or coconut milk), oil, and vanilla. Mix until smooth.
- Stir in the hot coffee or water last, mixing until combined. The batter will be thin.
- Pour the batter into the prepared pans and bake: 30-35 minutes for round pans or 35-40 minutes for a 9x13 pan.
- Allow the cake to cool completely before frosting.
Frosting
- Chill two cans of coconut milk overnight. Scoop the solid cream into a bowl, add powdered sugar and vanilla, and whip until fluffy.
- Keep the whipped cream chilled until ready to use to avoid melting.
Serving
- Frost the cooled cake with coconut whipped cream.
- Top with fresh fruits and toasted coconut flakes before serving.
Notes
Add fruits close to serving time to prevent them from weeping onto the frosting. Can be frozen unfrosted.
