Ingredients

Main Ingredients
  • 4 pieces chicken thighs Opt for organic chicken for tenderness.
  • 1/4 cup chipotle honey sauce Adjust based on spiciness preference.
Mashed Potatoes Ingredients
  • 2 cups potatoes Use fresh potatoes for optimal texture.
  • 1/2 cup smoked gouda cheese, shredded Select high-quality smoked gouda for rich taste.
  • 1/4 cup milk Can substitute with dairy-free milk.
  • 2 tablespoons butter Can substitute with vegan butter.
  • to taste Salt and pepper Used for seasoning.

Method

Preparation
  1. Preheat the oven to 400°F (200°C). This is crucial for achieving that perfect caramelization on the chicken.
  2. Marinate the chicken thighs in the chipotle honey sauce for at least 30 minutes.
Cooking
  1. Place the marinated chicken thighs on a baking sheet. Bake for 25-30 minutes until cooked through and caramelized.
  2. While the chicken bakes, peel and chop the potatoes. Boil them in salted water until tender.
  3. Drain the potatoes and return them to the pot, then add smoked gouda, milk, butter, salt, and pepper. Mash until creamy.
  4. Serve the baked chicken thighs over the mashed potatoes.

Notes

For added depth of flavor, consider searing the chicken before baking. Store leftovers in an airtight container; consume within 3 days. Freeze for up to 2 months and reheat in the oven for best results.
