- In a large pot, combine the chicken, broth, carrots, celery, and onion. Bring to a vigorous boil.
- Once boiling, reduce the heat and simmer for about 20 minutes, or until the chicken is cooked through and tender. Remove the chicken and shred it with two forks.
- In a separate bowl, mix together the flour, baking powder, salt, and pepper.
- Gradually stir in the milk and melted butter until combined, taking care not to over-mix.
- Drop spoonfuls of the dumpling dough into the simmering pot of broth. Cook for 10-15 minutes until fluffy and cooked through.
- Return the shredded chicken to the pot and stir gently. Let it simmer briefly, then serve hot.
