  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
Dumpling Ingredients
  • 2 cups flour Gluten-free flour can be used for dietary restrictions.
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ cup milk Almond milk can be used for a dairy-free option.
  • 2 tbsp butter Melted for the dumplings.
  • 1 tsp pepper

Method
 

Preparation
  1. In a large pot, combine the chicken, broth, carrots, celery, and onion. Bring to a vigorous boil.
  2. Once boiling, reduce the heat and simmer for about 20 minutes, or until the chicken is cooked through and tender. Remove the chicken and shred it with two forks.
  3. In a separate bowl, mix together the flour, baking powder, salt, and pepper.
  4. Gradually stir in the milk and melted butter until combined, taking care not to over-mix.
  5. Drop spoonfuls of the dumpling dough into the simmering pot of broth. Cook for 10-15 minutes until fluffy and cooked through.
  6. Return the shredded chicken to the pot and stir gently. Let it simmer briefly, then serve hot.

Notes

This dish is great on its own but pairs well with crusty bread or a light salad. Store leftovers in an airtight container in the refrigerator for up to three days.
