Ingredients

Main Ingredients
  • 1.5 pounds Chicken thighs, boneless or bone-in Boneless is easiest, bone-in is also great
  • 1/3 cup Soy sauce Low sodium if preferred
  • 3 tablespoons Brown sugar Reduce to 2 tablespoons if you like it less sweet
  • 3 to 4 Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated Or 1 teaspoon ground ginger in a pinch
  • 1 tablespoon Rice vinegar or lime juice For brightness
  • 1/2 cup Water or chicken stock
  • 1 tablespoon Neutral oil
Optional Additions
  • Black pepper To taste
  • Chili flakes To taste
  • Green onions For garnish
  • Sesame seeds For garnish

Method

Cooking Chicken
  1. Heat the oil in a skillet over medium heat. Add chicken in a single layer and cook for about 4 minutes without moving to allow for browning.
  2. Flip the chicken and cook the other side for 3 to 4 minutes. You're not fully cooking yet, just building color.
Making the Sauce
  1. Lower the heat slightly, sprinkle in the brown sugar and let it melt for about 30 seconds, stirring quickly.
  2. Add garlic and ginger, stir for 15 seconds, then pour in soy sauce and water or stock. Allow it to bubble up.
  3. Simmer for 8 to 12 minutes, occasionally turning the chicken until the sauce thickens and coats the back of a spoon.
  4. Finish with a splash of vinegar or lime juice.

Notes

Pat the chicken dry before cooking to help it brown. Also, mix your sauce beforehand to act quickly during cooking.
