Cajun Shrimp and Sausage Skillet

Ingredients
  

Main Ingredients
  • 1 lb Shrimp, peeled and deveined Medium or large shrimp preferred.
  • 12 oz Andouille sausage Any smoked sausage can be used.
  • 1 cup Bell peppers, chopped Red and green recommended for color.
  • 1 medium Onion, chopped Yellow or sweet onion works great.
  • 2 cloves Garlic, minced Fresh preferred, jarred is fine for convenience.
  • 2 tbsp Cajun seasoning Store-bought recommended.
  • 1 tbsp Paprika Adds warmth and smokiness.
  • 2 tbsp Olive oil or avocado oil For sautéing.
  • 1 tbsp Butter Adds flavor at the end.
  • 1 tbsp Lemon juice Brightens the dish.
Optional Add-ins
  • 1 cup Diced tomatoes or corn or zucchini or spinach Optional vegetables for extra flavor.

Method
 

Cooking
  1. Slice sausage into coins. Heat a large skillet over medium heat with oil. Add sausage and brown for 3 to 5 minutes.
  2. Add chopped onion and bell peppers. Stir and cook for 5 to 7 minutes until veggies soften. Add garlic for the last 30 seconds.
  3. Sprinkle in Cajun seasoning and paprika, stirring well to coat.
  4. Push sausage and veggies to the edges; add shrimp in the center. Cook shrimp 1 to 2 minutes per side until pink and opaque.
  5. Turn off heat and add a pat of butter and lemon juice. Stir and taste, adjusting seasoning if needed.

Notes

Do not overcook the shrimp; it cooks quickly. Leftovers can be stored in an airtight container for up to 3 days.
