Ingredients
  

For the Salmon and Shrimp
  • 2 fillets salmon fillets (6–8 oz each) Look for fresh, sustainably sourced salmon.
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 large shrimp, peeled and deveined For a time-saving option, use pre-peeled shrimp.
  • 1 tbsp butter
  • 2 cloves garlic, minced
For the Mashed Potatoes
  • 2 lbs potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup milk
For the Creamy Vegetables
  • 2 cups broccoli florets
  • 2 cups zucchini slices
  • 1 tbsp butter
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 clove garlic, minced
  • Pinch red pepper flakes

Method
 

Preparation of Mashed Potatoes
  1. Boil the potatoes until fork-tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and pepper until smooth and creamy.
Cooking the Creamy Vegetables
  1. Sauté minced garlic in butter in a skillet until fragrant, about 1 minute. Then add broccoli and zucchini, cooking until tender. Stir in heavy cream and Parmesan until well-combined.
Seasoning & Searing the Salmon
  1. Coat each salmon fillet with olive oil and season with Cajun seasoning, paprika, garlic powder, salt, and pepper. Sear in a non-stick skillet over medium-high heat for 4-5 minutes per side.
Cooking the Garlic Shrimp
  1. Melt butter in another skillet over medium heat. Add minced garlic and shrimp, season with paprika, Cajun seasoning, and salt. Cook until shrimp are pink and opaque, about 2-3 minutes.
Assembling & Serving
  1. On a plate, create a base of creamy mashed potatoes, layer the salmon and shrimp on top, and add the creamy vegetables on the side. Garnish with parsley and red pepper flakes.

Notes

This dish can be served with a light salad or crusty bread for dipping. For best results, let the salmon marinate in seasoning for 30 minutes before cooking.
