Ingredients

For the Pasta
  • 12 oz Fettuccine pasta You can also use penne, rotini, or linguine.
  • 2 cups Salted water For boiling the pasta.
For the Chicken
  • 2 pieces Boneless skinless chicken breasts or thighs Cut into thin strips or bite-size pieces.
  • 1 tbsp Cajun seasoning Store bought is fine.
  • to taste Salt and black pepper To season the chicken.
For the Alfredo Sauce
  • 2 tbsp Butter Unsalted preferred.
  • 2 cloves Garlic Minced.
  • 1 cup Heavy cream Makes it rich and creamy.
  • 1 cup Freshly grated Parmesan cheese Pre-grated works but freshly grated melts smoother.
  • optional Squeeze of lemon, chopped parsley, red pepper flakes For extra flavor and garnish.

Method

Cooking the Pasta
  1. Bring a big pot of salted water to a boil and cook pasta until just al dente. Save about 1 cup of pasta water before draining.
Cooking the Chicken
  1. Season the chicken with Cajun seasoning, salt, and pepper. In a large skillet, heat a splash of oil and cook the chicken over medium-high heat until browned and cooked through. Move it to a plate.
Making the Sauce
  1. Lower heat to medium. Add butter, then garlic for about 30 seconds until fragrant. Pour in heavy cream and stir, scraping up bits from the chicken. Let it gently simmer for a couple minutes.
  2. Sprinkle in Parmesan and stir until melted and smooth. If sauce is too thick, add a splash of reserved pasta water.
Combining Everything
  1. Add cooked pasta and chicken back into the skillet. Toss until coated. Taste and adjust seasoning. Add more Cajun seasoning or red pepper flakes for more heat if desired.

Notes

If you want to lighten the dish, substitute half and half for heavy cream. Pair with a simple salad or garlic bread for a complete meal.
