Preparation
- Preheat your oven to 350°F (175°C).
- Generously season the short ribs with salt and pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs on all sides until nicely browned, about 4-5 minutes per side. Remove the ribs and set aside.
- In the same pot, add the chopped onion, carrots, and celery, cooking for about 5-7 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it come to a boil and reduce by half.
- Add the beef broth, tomato paste, thyme, bay leaf, and the reserved short ribs back into the pot.
- Cover the pot and transfer it to the oven. Braise for 2.5 to 3 hours until the meat is fork-tender.
- Once done, remove the pot from the oven and discard the thyme and bay leaf.
- Serve the short ribs hot with your choice of sides.
Notes
Leftover short ribs can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. To reheat, add a splash of broth to maintain moisture.
