  • 1 lb chicken thighs Thighs stay juicy, while breasts can dry out—breasts will work if that’s what you have.
For the Sauce
  • 1/2 cup bourbon Adds a unique depth to the sauce.
  • 1/4 cup soy sauce Provides savory umami flavor.
  • 1/4 cup brown sugar Balances the saltiness of the soy sauce.
  • 3 cloves garlic, minced For aromatic richness.
  • 1 tablespoon ginger, minced Adds a nice kick.
  • 2 tablespoons sesame oil For cooking and added flavor.

Preparation
  1. Cut the chicken thighs into bite-sized pieces.
  2. In a large skillet, heat the sesame oil over medium-high heat.
Cooking
  1. Add the chicken pieces to the hot oil, cooking until they begin to brown, about 5-7 minutes.
  2. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  3. Pour in the bourbon, soy sauce, and brown sugar. Stir everything together, scraping up any bits stuck to the bottom of the pan.
  4. Reduce the heat and allow the mixture to simmer gently for about 10 minutes until the sauce thickens and the chicken is cooked through.
Serving
  1. Sprinkle with chopped green onions. Serve hot over steamed rice or alongside vegetables.

Notes

Marinate the chicken for more flavor if you have time. Adjust the sweetness to your taste and watch the heat while cooking the garlic and ginger to avoid burning.
