Preparation
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat the granulated sugar and eggs until light and fluffy.
- Mix in the vegetable oil and vanilla extract thoroughly.
- Gradually combine the dry mixture with the buttermilk, alternating between the two, until fully mixed.
- Divide the batter evenly between the prepared pans and smooth the tops.
Baking
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before turning them onto wire racks to cool fully.
Assembly
- In a chilled bowl, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Place one layer of cooled cake on a serving plate, brush with Kirschwasser, and spread a layer of whipped cream followed by cherries.
- Repeat with the second layer, adding more Kirschwasser and whipped cream.
- Cover the top and sides of the cake with whipped cream, then garnish with chocolate shavings and additional cherries.
- Refrigerate for at least 2 hours before serving.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days. Can be frozen for up to 2 months. For best results, serve slightly cold.
