Ingredients
  

For the Beef Roulades
  • 4 slices beef roulade slices Choose even thickness for uniform cooking.
  • 4 slices bacon Regular or turkey bacon can be used.
  • 1 medium onion, finely chopped
  • 1 tablespoon mustard Helps spices adhere to the meat.
  • to taste salt and pepper
  • 4 pieces pickles, cut into strips
For the Red Cabbage
  • 500 grams red cabbage Choose firm and heavy heads for freshness.
  • 2 medium apples, grated Pears can be used as a substitute.
  • 2 tablespoons vinegar
  • to taste sugar
  • to taste salt

Method
 

Preparation
  1. Preheat the oven to 180°C (350°F).
  2. Spread mustard on each roulade and season with salt and pepper.
  3. Place a slice of bacon, some chopped onions, and a strip of pickle on each roulade and roll them up tightly.
  4. Secure the roulades with toothpicks.
Cooking
  1. In a large pot, cook the red cabbage with grated apples, vinegar, sugar, and salt until tender, about 15-20 minutes on medium heat.
  2. In a skillet, brown the roulades on all sides until golden-brown.
  3. Place the browned roulades in a baking dish and cover with foil.
  4. Bake in the oven for about 45 minutes until a meat thermometer reads 70°C (160°F) inside the beef.
Serving
  1. Serve the roulades hot with red cabbage on the side.

Store leftovers in an airtight container in the refrigerator for up to three days or freeze for up to two months.
