Preparation
- Preheat the oven to 180°C (350°F).
- Spread mustard on each roulade and season with salt and pepper.
- Place a slice of bacon, some chopped onions, and a strip of pickle on each roulade and roll them up tightly.
- Secure the roulades with toothpicks.
Cooking
- In a large pot, cook the red cabbage with grated apples, vinegar, sugar, and salt until tender, about 15-20 minutes on medium heat.
- In a skillet, brown the roulades on all sides until golden-brown.
- Place the browned roulades in a baking dish and cover with foil.
- Bake in the oven for about 45 minutes until a meat thermometer reads 70°C (160°F) inside the beef.
Serving
- Serve the roulades hot with red cabbage on the side.
