Banana Pudding

Ingredients
  

Pudding Base
  • 1 can sweetened condensed milk 14 ounces
  • 1.5 cups ice cold water
  • 1 box instant vanilla pudding mix 3.4 ounces
  • 3 cups heavy whipping cream or 1 (8 ounce) tub whipped topping for an easier version
  • 1 teaspoon vanilla extract
  • 1 pinch salt optional
Layers
  • 4-5 medium bananas sliced
  • 1 box vanilla wafers or butter cookies, or shortbread cookies

Method
 

Preparation
  1. In a large bowl, whisk the sweetened condensed milk with the cold water until smooth.
  2. Add the instant pudding mix and whisk until there are no dry spots. Refrigerate for about 5 minutes.
  3. In another bowl, whip the heavy cream with vanilla until soft peaks form, then continue until fluffy and holding shape.
  4. Fold the whipped cream into the chilled pudding mixture gently.
Assembly
  1. In a trifle dish or a 9x13 pan, layer cookies first, then banana slices, and then pudding mixture.
  2. Repeat the layers until all ingredients are used, ending with pudding on top.
  3. Crush a few cookies over the top if desired, or leave it smooth.
Chilling
  1. Cover and chill for at least 4 hours, preferably overnight for the best flavor and texture.

Notes

Slice bananas just before layering to prevent browning. You can toss banana slices lightly with lemon juice if necessary but avoid using too much. This pudding recipe is perfect for potlucks and gatherings.
