Preparation
- Preheat the oven to 425 F (220 C). If possible, use a sheet pan with a rack to help crisp the chicken.
- Set up a breading line with one plate of flour, one bowl of beaten eggs, and a plate with a mixture of Parmesan cheese and breadcrumbs.
- Coat each chicken cutlet in flour, shake off excess, dip into the egg, then press firmly into the cheese and breadcrumb mixture.
Baking
- Place the coated chicken cutlets on the prepared sheet pan. Drizzle lightly with olive oil or mist with cooking spray.
- Bake in the oven for 16 to 20 minutes, depending on the thickness of the chicken. For a golden finish, broil for an additional 1 to 2 minutes, monitoring closely.
Resting
- Allow the chicken to rest for a few minutes after baking to help retain its juices.
Notes
Serve with simple spaghetti, roasted veggies, or a fresh salad. To reheat leftovers, use an oven or air fryer to maintain crispness.
