Ingredients
  

For the sausages
  • 4 pieces Australian style sausages (beef or pork) Choose plump and fresh sausages, preferably from a butcher.
  • 1 tablespoon oil For grilling.
  • 1 onion brown onion Cook low and slow for grilled onions.
  • 1 tablespoon brown sugar For caramelizing the onions.
  • 2 tablespoons vinegar To add tanginess to the onion relish.
For the toppings
  • 1 cup tomato sauce Classic BBQ sauce.
  • 1 tablespoon curry powder Use mild for an Aussie twist.
  • 1 tablespoon crushed pineapple For the cheeky pineapple curry sauce.
  • 2 tablespoons yellow mustard For the mustard mix.
  • 1 tablespoon honey To sweeten the mustard mix.
  • 1 lemon squeeze of lemon Adds brightness to the mustard mix.
  • 1 cup chopped pickles For crunch.
  • 1 cup crispy fried onions Store-bought for convenience.

Method
 

Grilling the Sausages
  1. Preheat the grill to medium heat and lightly oil the grill.
  2. Place sausages on the grill, turning them every couple of minutes to brown evenly.
  3. If sausages brown too fast, move them to a cooler spot on the grill to finish cooking gently.
  4. Avoid piercing the sausages to retain their juices.
Cooking the Onions
  1. Slice one onion and cook it slowly in a splash of oil with a pinch of salt until softened.
  2. Stir in 1 tablespoon of brown sugar and 2 tablespoons of vinegar until sticky.
Making the Sauces
  1. For the cheeky pineapple curry sauce, mix tomato sauce with 1 tablespoon of curry powder and a tablespoon of crushed pineapple, heat for a couple of minutes.
  2. For the mustard mix, combine yellow mustard, honey, and a squeeze of lemon.
Serving
  1. Serve sausages in soft white bread or hot dog buns, topped with grilled onions and sauces.
  2. Add pickles or crispy onions as extra toppings.
