  • 500 grams Beef mince Regular is fine, but not super fatty
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced or crushed
  • 2 tablespoons Tomato paste For richness
  • 1 cup Beef stock
  • 2 tablespoons Worcestershire sauce For classic savory kick
  • 2 tablespoons Flour or cornflour To thicken
  • to taste Salt and pepper Plus a pinch of paprika if desired
  • 1 package Puff pastry For the lid
  • 1 package Shortcrust pastry For the base, or puff pastry for all flaky
  • 1 large Egg For brushing on top

Preparation
  1. Cook the filling: sauté onion, add garlic, then brown the beef. Stir in tomato paste, stock, Worcestershire, and seasoning. Sprinkle in flour or cornflour and simmer until thick.
  2. Cool the filling: spread it on a plate or tray so it cools faster. Aim for 20 to 30 minutes.
  3. Preheat your oven and prepare the pastry: cut rounds for your muffin tin and lightly grease it.
  4. Fill and lid: spoon the cooled filling into each base, avoiding overfilling. Add puff pastry lids and press the edges gently.
  5. Egg wash: brush the tops with beaten egg for a shiny appearance.
  6. Bake: place in a hot oven until deep golden, approximately 20 to 25 minutes, checking the first time.

Notes

For dips, consider serving tomato sauce, BBQ sauce, sweet chili, garlic aioli, or mushy peas. Always keep dips in smaller bowls to avoid looking tired.
