  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch round cake pan.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the apple cider, sugar, eggs, vegetable oil, and vanilla extract until smoothly incorporated.
  4. Gradually add the wet ingredients to the dry ingredients and stir gently until just combined. Fold in the diced apples.
  5. Pour the batter into the prepared cake pan and spread it evenly.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Cooling and Serving
  1. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
  2. Dust with powdered sugar before serving if desired.

Notes
